Organic Raw Mediterranean Beet Salad (V, GF)

I absolutely LOVE the colors and fresh flavors of this dish ~ it takes “eating the rainbow” to a whole new level! Beets are a wonderful support for cleansing and detoxing the liver, as well as promote radiant skin. But let’s face it ~ sometimes they are hard to eat. This salad is crazy deelish and is packed with superfood ingredients that are natural antioxidants, boost immunity, have antibacterial/antifungal properties, promote digestion and overall health & wellbeing. Hearty enough to be its own meal or it makes a gorgeous side dish.

Ingredients*

1 container spiralized red beets (avail at Whole Foods) or shred/spiralize your own

1 cup organic, cooked chickpeas

1/2 red onion, chopped

3 organic green onions, chopped

2 organic carrots, shredded

1/4 head of organic cauliflower, finely chopped (cauliflower rice)

1 handful of greek olives, chopped

1 handful of broccoli sprouts

1 head organic parsley, chopped

1 handful of organic mint, chopped

1 handful of organic basil, chopped

1/2 cup organic sunflower seeds

Dressing

Juice of 2 organic lemons

3 tbsp organic, first cold pressed olive oil

1 tbsp organic garlic powder

(Optional) Sea salt

Mix all ingredients together in a large bowl. Cover and refrigerate for 30 minutes before eating (for full flavor).
